Norbert Niederkofler

Internationally renowned top Chef and South Tyrol’s only 3-star and green Michelin Star Chef, Norbert Niederkofler’s creativity, thirst for discovery, and love of experimentation have always distinguished him. With revolutionary concepts, ongoing enthusiasm, and unique ideas, he decisively developed haute cuisine.
From July 2023, Norbert Niederkofler is at the helm of Atelier Moessmer Norbert Niederkofler in Bruneck, the first in the world to win several major awards in less than a year after opening. Here ‘Cook the Mountain’ found the perfect dimension to spread its sustainable principles. In November 2023, Atelier Moessmer was awarded three Michelin Stars and the Green star only 4 months after the opening, setting a world record in Michelin Guide history.
In June 2025, Atelier Moessmer reached 20th place in the prestigious list of ‘The World’s 50 Best Restaurants’ and is now ranked among the best restaurants in the world. In 2018, Norbert opened AlpiNN by Norbert Niederkofler, an all-round sustainable restaurant. Located at 2,235 meters above sea level and offering a breathtaking panorama, the restaurant allows young chefs to deliver authentic mountain flavors through an accessible and seasonal menu.
In May 2025, Norbert took over the management of Ansitz Heufler, a historic residence dating back to 1580, located in Rasun di Sopra in the Anterselva Valley. The property offers beautiful suites for an exclusive and immersive stay, as well as a bar and a restaurant focused on traditional South Tyrolean cuisine.
Norbert Niederkofler is “THE ethical Chef.”
As a visionary and revolutionary, he has not only significantly influenced South Tyrolean gastronomy with his “Cook the Mountain” concept and “Care’s” events but has also set new standards internationally in haute cuisine. The fact that High Cuisine addresses issues such as sustainability, short cycles, and supply chains with local producers and farmers, as well as seasonality, is thanks to him. For this, he was also one of the first to be awarded the “Green Michelin Star.”
